Can I use only 1 (16gb) dimm module on the MSI Xpower Z270x gaming titanium motherboard? I believe the answer is no modules must be used in sets of 2, but somewhere I heard this MB can work on a single dimm.

Using a single stick will just run a board in single-channel mode. Dual-Channel really requires two memory sticks that are the same size to work as a pair. There isnt much performance to gain in Single vs Dual Channel. Its lesser than 10% usually in benchmark tests.
Crucial has a memory scanner that can help find which memory sticks you can use: http://www.crucial.com/usa/en/systemscanner
Otherwise look up the motherboard specs and dont exceed specs.

as Dave says, as long as 16GB per slot doesn't exceed the mobo specs, you should be good.
as to dual vs single, the way I've always thought of it, although you will see a gain in dual and granted, it's not great, what you tend to notice is more things will be able to be running without the PC slowing down.
personally, I'd be putting in 2x8GB sticks.
not much difference in price, you will get a slight gain but if one fails - only one fails. all your eggs aren't in one basket.

Always buy memory in matched pairs or in some case that has triple flex then 3 matched modules.
