Hi guys! i was just wondering, because im getting SLI sometime, is it possible to have

or do they both have to be 8800gts 320 mb?

You can but it is not recommended.
If you install a 8800 gts with 320 mb RAM and a 8800 gts with 640 mb RAM then both cards will use the lower of the two memory sizes. So both will only use 320 mb RAM and the last 320 mb on the card with 640 will essentially be wasted.

Yes as long as the GPUs match the manufacturer shouldn't matter.
