iTunes itself doesn't store any music. It stores only list(s)/library of your music files, which are stored somewhere on your computer.
Unless you changed the default location, you'll find them in My Documents\My Music\iTunes\iTunes Music
just copy them to CD/DVD, and transfer them to your new computer.

If you have all of your music on your iPod (how big is it?), you can simply hook it up to your new computer, and move all music from iPod to new computer.

No, no...Open Windows Explorer, iPod will be visible as separate drive. Copy all music files from your iPod to any folder of your choice on your new computer.
THEN, you open ITunes, and import all those songs to iTunes library.

You should see some numbered folders. look at my screenshot below:

                          *.mp3
                          Click Search.

                            OK. I suspect why.
In Windows Explorer, go Tools>Folder Options>View tab.
Put a checkmark into: "Show hidden files and folders".
                            Click OK.
                            Close Windows Explorer.
Reopen Windows Explorer, and check your iPod drive again.

You can simply select all those F00, F01 folders at once, and copy them to any folder of your choice on your HD. The best way would be to create some new folder, like MP3...

Transfer music to your hard drive, first. Then, open iTunes, and go File>Add file to library
