I was wondering can you use XP Pro as a server for local machines attached to it?

    Yes.
Any operating system can be used as a server as long as the server software you want to use supports the operating system.

If you're looking for more than a generic answer you will have to be more specific on what kind of server you want to run.

What do you mean by log on?
Do you mean a remote desktop connection to your computer?

XP can't do that. (Not that I'm aware of anyway).
You will need Windows Server 2003 (or newer) with Terminal Services.
