Self Extracting EXE program

I have this project i am working on for myself and i was wondering...
i have a BAT file that opens the windows utility to create the EXE file

@ echo off
start C:\Windows\System32\IEXPRESS.exe
exit

I was wondering if it is at all possible to include folders in the EXE extraction, or is there another utility that i should use to create EXE extracting programs??
