My desktop PC is old

Within the past week I replaced my PSU (With the CORSAIR HX1200i) because the old one was dying and kept forcing my PC to shut off if I tried to game long hours, watch live videos etc...(month half ago, I had no issues doing these stuff)

After replacing my PSU it worked normally for a day and half where I was able to game (Geshin Impact & Valorant) for long hours again running it on their highest settings

After that day and half, it started displaying the same symptoms where the PC will shut down after trying to game, now for me to game long hours, I have to run the game in low graphics settings and choose a smaller resolution, this way it does not shut off while I am playing

Trying to figure out what is triggering the PC shut off, I noticed that (While playing with the game's graphics) that the PC would consistently shut off when my GPU is last seen at 75-77C, with the game's current settings the GPU is sitting at 62C or lower

Could the GPU's temperature force my PC to shut off? Is there a resolution for this?

I have tried playing with open case, it made no difference to the GPU's temperature

Edit: I went in to my BIOS and found the following message, could be a clue to my current issue
"The system has experienced boot failures because of overclocking or changes of voltages."

I have never overclocked or made changes to the voltages, everything should be on stock but there are a couple of things that comes to mind

I recently switch the X.M.P. from Disabled to Profile1 because someone said my RAM is under-performing (Should I switch it back to Disabled?)

and I have always had Performance Enhance set on Turbo, since the day I put it together 11.5 years ago, should I set it to standard now?
