I just got one of my machines up and running with Suse  ;D.  I'm rather excited, not going to lie here.  Anywho, I'm new to it so does anyone have any good projects to undertake that would be worthwhile and fun?

Absolutely.  Set up your own web server.  :)

find out wich windowmanager or desktop you prefer. http://xwinman.org/
You can learn a programming language
Configure your own server (webserver, proxy, mail , $var)
Have a look at http://freshmeat.net you might find programs you like
