Vid Codec recommendations

This is a question for folks who are well familiar with the options we have available.

To avoid problems for prospective viewers of material .... I often wonder what might be regarded as the safest codec choices when DVD ripping and converting.  I find it hard to remember all option details and don't want people to have to scramble to find a suitable codec when playing a file.

Main concerns are choices with .WMV, .MPEG, and MP4 - to achieve pretty much cross-platform reliable compatibility.  Sometimes an editing prog employs a default but others give many choices.

So - what are safest choices in other's opinions?
Ain't technology great - until it goes wrong!
