What is Folding@Home?
All I can figure is that it has something to do with GPU's and maybe proteins (although I'd have no clue as to how they fit together).  ???

That link did not help much. I still don't understand. All I could gain from it is that it runs a program on my computer to somehow help proteins.  ???

I would like it if someone could give me a simple explaination and tell me how it works.

The program give an algorithm to your GPU/CPU where they work out complex sums.  These algorithms/sums replicate how a protein "folds".  For what protein folding means, you can look up yourself.

I am very interested in joining.

But I have a few questions still that would have to be answered first:
    1. Will the program always be running, if so will it slow my computer down much? Or can the program be turned on/off as I like?
    2. Will it use much internet traffic? I only get 5-7MB monthly so this is important.
    3. Does my CPU/GPU need to be a certain speed or can any old PC run the program?

it will always run and will not slow your pc you can pause it if you want to but there is no need to

    2. Will it use much internet traffic? I only get 5-7MB monthly so this is important.

it only connects to the net to send back the finished work unit that could take 10 mins

    3. Does my CPU/GPU need to be a certain speed or can any old PC run the program?

any old thing mine is 4/5 years of age

hope you join us in the team
