DVR Composite or IP based video capture

Trying to weigh the advantages and disadvantages to Composite Digital Recording vs IP Digital Recording with an IP digital communication over cat 5 eye vs composite analog to digital eye.

Anyone have any suggestions or links that might show a good comparison.

Looking into installing a security setup at our small food store and wondering what is more reliable instead of video quality pretty much.

We have looked at Panasonic brand, and some sales reps have suggested Honeywell. Since this is computer technology related but doesnt fit any other category, I placed it here.

IP-based gives you access to a wide range of software you can use.  I've been pretty impressed with that kind of stuff.  Dedicated recorders are more user-friendly though.
Only able to visit the forums sporadically, sorry.
